Yummy!

I've got some cilantro in my fridge. Love that stuff. Decided I needed to come up with something for dinner that involved it. Remembered my dear friend Heather's recipe for pulled pork tacos. Thrilled that I actually thought of it. They are DELISH! So for those of you who don't have this recipe here it is. Easy and good.

PULLED PORK TACOS
2 to 2 1/2 lbs boneless pork shoulder (or chops)
2 tsp. salt
1 tsp. black pepper
2 tsp. cumin
1/2 c. apricot preserves
2 jalapenos, sliced into rings and seeded
1 red onion, roughly chopped (or yellow)
tortillas
lime
CILANTRO

Season pork on all sides with salt, pepper and cumin. Place in crock pot. Spoon jam over pork turning to coat. Scatter jalapenos and onion over top. Cook on low heat for about 6 hours or until fork tender. Shred. Serve with warm tortillas, cilantro and lime wedges.

Mom of the Year Award!

Yes, that is what I should be given after todays events. Took the kids (along with our their friends) to school today. As they are getting out of the car we realize there is a fire (drill?) going on. I thought it was a strange time of day for a drill. But alas, I send them on their way to line up (not on the blacktop as usual) on the grass. All the while thinking this is strange.

Then, what to my wondering eyes should appear, but a shiny red fire truck for this mother of the year!

Yes, apparently it was not a drill and staff were quickly rushing cars out of the parking lot to clear the way. I know the kids are safe but I can't help but want to go rush them out of there. I stayed strong, drove away, and drove back 10 minutes later.

Crisis was averted and I saw all the kids entering the school. Found out there was simply a BAD smell in one of the pods. They had to check it out.

I feel like such a winner today!

A Shout out for Scouts!


Congratulations to Nathan for earning is Bear and also getting a big jump start on his Webelos and Arrow of Light . He is looking forward to a fun year in Webelos and excited about the challenge it will bring. I think he has been a little bored with Scouts so far so it is nice to see him enthused!

1. Do not leave eye glasses where baby can reach them

2. Baby WILL brake them

3. Super glue, hot glue gun and craft glue will NOT put them back together again

4. At least you were smart enough to hang on to the old eyeglasses

5. Try again to find contacts that will work for your retarded eyes

This is what a best friend looks like. Samantha and Abby, two peas in a pod. And as tradition seems to dictate my kids lose their best friends at the wee age of 4. Our little Abby is moving (in 3 days). It's a double whammy for us, her mother is also one of my best friends. We got to spend the day helping them pack (side note: just notice my son Nathan sitting "inside" the back cushion of our couch, stuffing coming out everywhere, geez louise.) Anyway back to packing. It's good to be able to help friends out when they really need you. It was actually a pretty fun and crazy day.


Samantha is going to be so sad (well I think she already is). The reality of the move is here and she knows her days are numbered. She has had a hard week and has been quite grumpy. Not old enough to understand that she really needs to enjoy her last days with Abby.


We love our Forsyth friends and will miss them sooooooo much :(

The Urge to Purge



That's been me lately. Can't stand all the excess in this house. IF I were pregnant people might say I'm nesting. (but I'm not)


Please enjoy the vast expanse of carpet in the playroom, it's not seen often. I rearranged it last week to give the kids more room to play. They are enjoying the space, which is obvious by the mess I am once again looking at. But at least I took a picture (it lasts longer!)


Today I am putting together my DI run. I have junk scattered all over the place I need to gather and dispose of. More baby stuff to say goodbye to, and stuff I just don't want to look at anymore. I do feel kinda bad, as much as I love having little ones, I can't wait to get rid of some of these big bulky toddler toys. At least today some of the baby ones can go. I have found that I am more aware of EVERYTHING we own living in LV. There is just no place to really store stuff.


So, the moral of this story is I must turn off my computer today (for a bit) and get some work done. I have been working, just need to finish up, that's the goal for today!

A couple a' dancin' queens








Had the girls dance recital last weekend. It was really cute and they worked really hard. I am so glad it's over. Why does this have to be so exhausting? Kristen had 2 dances and Samantha had one. Once again Samantha has decided that she is done with dance. Fine by me. We will look for some affordable (ha ha) gymnastic lessons for her next. Kristen will start dance up again in the fall. I need a break from classes.

Samantha's dance was to Love Shack by the B52's

Kristen did ballet to the Lonely Goatherd from the Sound of Music

Also, a jazz dance to Boogie Fever by who knows

Just a Thought...

Watched Oprah for a few minutes today. Some hot guy was in a near fatal car accident and they were talking about how that experience has changed his life, blah blah blah.... One thing he said got me thinking. Said he lives each day as if it were his last. Not a new statement by any means but made me think "how does one really do that".

I know if I actually tried to live that way I wouldn't have wasted time cleaning my kitchen or vacuuming today. My children certainly wouldn't have gone to school and my husband wouldn't have gone to work. So how exactly does one live life like that?? Hmmmmmm......

It's kinda funny, I've been thinking about this all day. I certainly want my life to have meaning (granted I've birthed 4 children so that's a good one right there, right). I want to live as honestly as possible, I want the people I love to know that. So the only way I can think of living that way is to do my best each day to love my family and friends, to serve others, to continue improving myself, to have fun, and stay close to my HF. I mean, I can't just have fun all the time, chores need to get done, kids need to get beat (JK!), bills need to be paid, post need to be blogged!!! And quite frankly sometimes I'm just grumpy.

So what are your thoughts on living like it's your last day, how do we make that more than just a nice statement??

THE FINGER...


Is not broken (the pointer finger to be exact). Got a call from the school today. They think Nathan has broken a finger. Jammed it playing basketball.


To Nathan's dismay it is not actually broken. But he decides that possible tendon damage is still a broken finger. Now we get to go see a specialist to check the tendons. Yay for me.


He says he is proud of himself. Feels like a man! The first broken body part is always cool.

Would you not agree that rats and mice and such are disgusting creatures??!! So why then I ask, are there so many movies staring them. It currently escapes my mind the new movie that has brought about this question, but as I was thinking, there are way too many movies about not so cute mice and rats!

A Bit of Crafting...

The girls and I had a little craft night when the boys went camping. We made these little lunch boxes. They picked out their own paper and helped to mod podge it on. Samantha's is the top and Kristen's is the bottom. They are anxiously waiting for me to make mine, but I think I will have a harder time picking my paper than they did. I am so grateful to have little girls in my life. We enjoy doing our little girly things together.
